The chocolate chia swoon

This is a to-die-for breakfast or snack that’s also gut friendly and will help keep you regular.

ingredients

1/2 cup chia seeds, black or white

1/2 cup raisins or sultanas, or other preferred chopped dried fruit

2 cups filtered water

2 tbsp cinnamon powder

Other spices eg ginger, cloves, nutmeg, optional

1 can coconut milk or cream

4 tbsp cacao powder

4 tbsp raw honey or maple syrup, or to taste

  1. The night before, in a deep bowl mix the the chia seeds, dried fruit, water and cinnamon well. It will immediately start to thicken

  2. Cover with a plate (not plastic or silicon wrapping as it needs to breathe for micro-organisms). Leave on the kitchen bench to soak overnight (do not refrigerate)

  3. The next morning, add a can or coconut milk or cream (for a creamier taste), cacao powder and honey or maple syrup and stir well

  4. Serve with fruit eg berries or banana

  5. Store in the fridge
