Ingredients
1 ripe mango, peeled and diced, or equivalent frozen mango
1 avocado, diced, can also use frozen
1/4 small red cabbage, thinly sliced
1 carrot, grated
2 green onions, chopped
1/4 cup fresh coriander / cilantro, chopped
Juice of 1 lime
Juice of 1 orange
2 tbsp olive oil
A pinch of chili flakes, optional
Salt and pepper to taste
Directions
In a large bowl, combine the mango, avocado, red cabbage, carrot, green onions, and cilantro
In a small bowl, whisk together the lime juice, orange juice, olive oil, chili flakes, salt and pepper
Drizzle the dressing over the salad and toss gently to combine
Serve immediately
