Mango & Avocado Salad with Citrus Dressing

Ingredients

1 ripe mango, peeled and diced, or equivalent frozen mango

1 avocado, diced, can also use frozen

1/4 small red cabbage, thinly sliced

1 carrot, grated

2 green onions, chopped

1/4 cup fresh coriander / cilantro, chopped

Juice of 1 lime

Juice of 1 orange

2 tbsp olive oil

A pinch of chili flakes, optional

Salt and pepper to taste

Directions

  1. In a large bowl, combine the mango, avocado, red cabbage, carrot, green onions, and cilantro

  2. In a small bowl, whisk together the lime juice, orange juice, olive oil, chili flakes, salt and pepper

  3. Drizzle the dressing over the salad and toss gently to combine

  4. Serve immediately
