Pork with white beans

Notes
Pork can be high in antibiotics and beta blockers. Buy organic or chemical free where possible
Ensure white beans are soaked for 24 hours to reduce anti-nutrients (phytates), that pull minerals from the body. If you’re healing your gut, it’s best to remove all legumes from your diet
To increase to 4 serves, double the amount of cannellini beans

Ingredients
1 cup dried cannellini beans (or 1 x 400g can cooked cannellini beans if in a rush but these aren’t pre-soaked)
1 ½ tbsp cold pressed olive oil
1 tsp ghee
1 onion, chopped finely
4 cloves garlic, chopped finely
500g pork mince
1 x 400g can chopped tomatoes or 400g chopped fresh tomato
1 cup bone broth, chicken or beef
5 fresh sage leaves, chopped finely
½ tsp dried oregano
½ tsp dried porcini mushrooms
2 tsp Himalayan or Celtic Sea salt
Ground black pepper
¼ tsp chilli flakes, optional
Directions
If using dried beans, soak overnight, rinse, bring to the boil and cook until soft. Put aside
Gently heat the oil and ghee. Fry the onions and garlic until soft and lightly browned
Add the pork and fry for 3-4 minutes, leaving some solid chunks
Add the tomato, bone broth, herbs, mushrooms, seasoning and chilli if using
Simmer for 15 minutes, gently reducing the liquid
Add the beans and heat through
Serve with your favourite mash and steamed greens
