Here are two versions of a tasty beetroot salad to support your liver and gallbladder naturally. Use these recipes as a base, adding other raw or cooked vegetables or proteins as you wish.

Bitter greens support liver function. Beets help thin bile to get it moving again. Low-fat diets can lead to gallbladder congestion by causing bile to accumulate that would normally break down fats that never arrive.

You can double or triple the ingredients and keep the undressed salad in a sealed container in the fridge for up to 3 days. Great for easy lunches with a protein like tinned or smoked salmon or sardines, or fibre-rich cold sweet potatoes and pumpkin for a sweet twist

Ingredients

Version 1

1 grated beetroot, raw or steamed

1 cup bitter greens such as rocket, dandelion leaf, endive, radicchio, optional

1 tbsp vinegar

2 tsp olive oil

Unrefined salt and pepper to taste

Version 2

Equal parts of grated raw beetroot, green apple and carrot

1 cup bitter greens such as rocket, dandelion leaf, endive, radicchio, optional

1 lemon, juiced

Olive oil

Unrefined salt and pepper to taste

directions

  1. Grate vegetables and/or fruit. Add the greens

  2. Mix the lemon or vinegar with the olive oil, salt and pepper

  3. Dress the salad with the dressing

  4. Add a protein or more vegetables as you like
