Low oxalate (& low-medium histamine) flour mix

Here is a list of low-oxalate flours and starches that can be used to make a flour mix. This mix can be used in any recipe to replace other flours.

Below is my recipe for the one I find works well. You can trial these other flours, but a mix of lighter starches combined with heavier flours works best.

  • Potato starch (NOT flour)

  • Cornstarch

  • Green Bean starch

  • Sweet potato starch (NOT flour)

  • Flax meal / seed

  • White masa corn flour

  • Green pea flour

  • White rice flour

  • Sweet rice flour

  • Coconut flour

  • Water chestnut flour

  • Yellow pea flour

NOTES

Gluten free, low oxalate and medium histamine (due to the coconut flour, which you can leave out). Organic ingredients will help ensure lower pesticides, herbicides and heavy metals, which can lead to gut health issues and oxalate/histamine problems.

This is not a low-carbohydrate or Paleo mix.

PREPARATION TIME

YIELDS

2 1/2 cups. Adjust by halving or doubling etc to make a batch for immediate use or more for later

INGREDIENTS

1 cup potato starch

1 cup rice flour

1/2 cup coconut flour

1 tsp gluten- and aluminium-free baking powder

1 tsp bicarbonate of soda

DIRECTIONS

  1. Place all ingredients in a bowl or jar and mix thoroughly

  2. Can be used immediately or stored in an airtight container
