Healing low histamine meat broth

While it’s possible to get a lower histamine bone broth by simmering it for a shorter time e.g. 30 minutes to 2 hours, this recipe is safer, especially if you’re very sensitive or have MCAS.

This meat broth means you can still get some of the same benefits, including that it helps heal the gut lining, improves joint health, supports better sleep, and is an easily digested source of vitamins and minerals, depending on what vegetables and herbs you add.

YIELDS

4 cups

INGREDIENTS

2 cups low histamine meat (fresh, bone free, thawed in the fridge, unhung)

4 cups clean water

1 onion, chopped, or the green stalks from spring onions

Other vegetables or scraps to taste, optional

2 cloves garlic, chopped or minced

1 teaspoon natural salt

Optional

2-3 tsp teaspoon herbs e.g. basil, coriander, lemongrass, thyme, oregano, rosemary, pink pepper

DIRECTIONS

  1. Boil the water and add the meat, vegetables, salt, and herbs. Bring to the boil again

  2. Simmer for 20 minutes over low heat

  3. Take off heat and allow cool for 5 minutes

  4. Strain and drink immediately, or freeze in a jar or as ice cubes

  5. You can use the meat in another recipe
