'Hidden' greens

This delicious and easy recipe for 'hidden' greens (my husband even likes bok choy and Brussels sprouts cooked this way, which is saying something), is a great way to up your greens. You can eat it for breakfast, lunch or as a light dinner.

Gluten and dairy free, Paleo and AIP (use coconut aminos or salt, not tamari).

Greens feed your good gut bacteria, supply Vit B9 (folate), and give you protective nutrients.

ingredients

1 tpsp healthy fat like olive oil, coconut oil, animal fat, ghee (if you tolerate)

2 slices organic bacon or 4 prosciutto

8 cups roughly chopped greens

1/2 cup broth if available

1 tsp coconut aminos, tamari or salt

Other vegetables if desired like mushrooms, onion, garlic

directions

  1. Heat the fat in a frypan or wok

  2. Add in the bacon and fry until is starts to crisp up

  3. Add in the vegetables, broth and flavouring, and stir fry until cooked through
