Oysters 3 ways

Hopefully everyone will find a favourite out of these 3 oyster recipes.

Oysters are high in zinc. Six oysters (60g) contain 36mg of zinc giving you 3-4 times the Australian recommended daily intake (note that men need more zinc than women). Gram for gram, they outstrip the next highest food, beef, by 6 times. Oysters can also be a good way to get some raw food, great for digestive enzymes and beneficial bacteria. But cooking oysters won’t destroy their zinc.

6 people will get 6 oysters each (2 of each type), but that depends on how much you love oysters!

NOTES

The gluten free soy sauce or tamari may be replaced with coconut aminos if you’re soy intolerant

INGREDIENTS

36 Oysters

Soy-Ginger Sauce

2 tbsp (30 ml) cup rice wine vinegar 

2 tbsp (30 ml) sesame oil

15 ml tamari or gluten free soy sauce

1 tsp finely grated ginger 

Paleo fried

1/4 cup tapioca, cassava or arrowroot flour

1/8 cup coconut flour

1/2 tsp sea salt

1/4 tsp garlic powder

1/2 tsp smoked paprika

1/8 tsp cayenne (optional)

1 organic, pastured egg

1/8 cup avocado oil, and 1/8 either coconut oil or pastured tallow (so there’s 2.5cm of oil in the pan)

6 slices prosciutto

12 toothpicks, pre-soaked in water for 10 mins

DIRECTIONS

Soy-Ginger Sauce

  1. Mix together the sesame oil, rice wine vinegar, soy sauce and ginger. Cover with plastic wrap and refrigerate until ready to serve. This sauce can be made 1 day in advance

Paleo fried

  1. Rinse shucked oysters and set aside

  2. Whisk to combine the arrowroot, coconut flour, sea salt and spices

  3. In a small bowl, whisk the eggs until frothy

  4. Add fats to a sauté pan over medium-high heat until hot

  5. Dip oysters in eggs, then coat well in the flour mixture

  6. Place coated oysters in the preheated oil. Be careful not to crowd the pan

  7. Cook until golden until both sides are crisp and light brown, flipping if needed

  8. Serve immediately with lemon wedges

Prosciutto devils on horseback

  1. Cut each prosciutto strip in half ad wrap snuggly around an oyster. Secure with a soaked toothpick

  2. These can be cooked in the oven or grilled. If using the oven, preheat to 230° C and cook until the prosciutto is crispy, turning over half way through. Takes about 10 minutes

  3. If grilling, set under the broiler for 2-3 minutes. Turn and repeat

  4. Serve immediately with lemon wedges
