Where possible and affordable, organic and activated seeds are optimal (you can activate seeds yourself)

Ingredients

1/2 cup flaxseed, whole or ground

1/4 cup hemp hearts, whole or ground, or use preground flour

1/2 cup pumpkin seeds, whole or ground

1/4 cup Sunflower seeds

1/3 cup dates

1/4 cup raisins

1/4 cup cranberries, lightly chopped

1/2 cup desiccated coconut

1/2 tsp vanilla paste or seeds from 1 vanilla pod

1/2 cup coconut oil, melted

Pinch Celtic Sea or Himalayan Rock Salt

1/2 cup desiccated coconut for rolling

optional

1 rice cake, crumbled for extra texture

Directions

  1. Put all ingredients, except for the sunflower seeds, desiccated coconut and cranberries, in a blender and mix until just blended

  2. Mix in the sunflower seeds, desiccated coconut and cranberries

  3. Roll mixture into little balls with slightly wet hands

  4. Roll around in the remaining desiccated coconut until coated and put in the fridge for 30-45 mins or until firm. Store in the fridge or freeze batches for later
