Seafood chowder AIP

This delicious chowder is gut healing, full of good fats and protein, and a great meal for any season.

This recipe is AIP, Paleo, low histamine, and gluten, corn and dairy free.

ingredients

1 tablespoon olive or coconut oil

1 brown or white onion, chopped

1 stalk celery, chopped

4 16 rashers of bacon, chopped

1 leek, chopped

1 small sweet potato, peeled and diced into smallish cubes

2 cloves garlic, crushed

2 bay leaves

A few pinches of your favourite herb e.g. basil, tarragon, thyme

500 ml chicken or fish broth

500 ml coconut milk

6-800 g mixed seafood e.g. prawns, salmon, smoked trout. white fish, muscles, pipis, bug tails, wild caught and not farmed if possible

2 cups green leafy vegetables, chopped finely (I used bok choy)

Salt to taste, Himalayan or Celtic Sea

directions

  1. Melt the coconut oil in a large saucepan and sauté the onions, garlic, celery and leek until translucent

  2. Add the bacon and stir until it cooks

  3. Add the broth, sweet potatoes, bay leaf and herbs and cook for around 25 mins until the sweet potato is soft

  4. Add the coconut milk and heat until simmering

  5. Add the green vegetables, chopped fish and other seafood and cook for another 5+ mins

  6. Season to taste. Add a squeeze of fresh lemon when served
