Crispy sweet potato fritters
Crispy sweet potato fritters are great alone or with a protein of your choice for breakfast lunch or dinner. Change the flavour by using alternative herbs or spices.

ingredients
2 medium sweet potatoes, grated
1 onion, finely chopped
2 eggs
4 tbsp coriander, roughly chopped
1 tsp ground cumin
1/2 tsp caraway seeds, optional
Natural salt to taste
3 tbsp olive or coconut oil for cooking, I like a combination of both

Grate the sweet potatoes and chop the onion and coriander
Mix well together in a bowl with the eggs, spices and salt
Heat the oil in a pan
Form flat patties of mixture in your hand,and place into the hot pan. Cook on moderate heat for around 7 minutes each side or until each side iscrispy and browned
Serve with your favourite sauce such as my healthy fats Mayonnaise or divine Green Goddess Dressing
