NOTES

There are two ways to cook these. You can fry them in oil and/or ghee, or broil them in broth or water

These can be frozen for later

INGREDIENTS

1 kg turkey mince

2 eggs

1 onion, finely chopped

1 celery stick, finely chopped

1 carrot, grated

1 zucchini, grated

2 cloves garlic, crushed

1/2 tsp unrefined salt like Celtic Sea or Himalayan

1 tbsp coconut oil or ghee and 1 tbsp olive oil if frying

2 cups bone broth if broiling

2 tsp herbs like tarragon, sage, oregano, thyme

DIRECTIONS

  1. Mix the meat, eggs, vegetables, garlic, salt and herbs well with a potato masher or your hands

  2. If frying, melt the oil or ghee in a large frypan and when heated, place the meatballs in so they’re close together. Brown on both sides, around 5 mins each, and keep turning until cooked, around 25 mins

  3. If broiling, heat the broth and when simmering add in the meatballs close together., bringing back to a gentle simmer. After 12 mins on one side turn and repeat on the other side

  4. Optional, dribble over gluten free soy sauce or coconut aminos

  5. Eat hot or cold, or freeze for later. These go well with a tomato sauce
