2-ingredient lo-carb pancakes

These must be the world’s simplest, most delicious and satisfying pancake. They’re lo-carb, dairy and grain free, and a great breakfast if you’re transitioning away from refined carbs and sugar towards a protein breakfast.

If you cook them in coconut oil, or add a bit of coconut yoghurt or cream, they’ll also give you some fast energy. The salt contains a healthy balance of minerals.

INGREDIENTS

2 organic pastured eggs

1 banana

Pinch of Celtic Sea or Himalayan Rock Salt

1 tbsp coconut oil, ghee or olive oil

DIRECTIONS

  1. Mix together the banana and eggs with the salt in a blender for 1 minute. Alternatively, mash the banana with a fork and mix with the eggs

  2. Heat the oil in a fry pan and pour in the batter, making either 1 large or 2 smaller pancakes

  3. Cook on low heat. Turn carefully when mostly cooked (can be a bit fragile)

  4. Serve and eat immediately with coconut yoghurt or cream, and berries (optional)
