Alternative nut flours to almond include cashew, hazelnut and brazil

Paleo, Vegetarian, Sugar free, Dairy free and Gluten free

Ingredients

1 ½ cups almond meal, or mix of other nut meals

½ cup desiccated coconut

1 lime, juice and zest

1 ½ tbsp stevia, or substitute sugar like honey or coconut sugar

½ bunch fresh mint

½ tsp vanilla paste or seeds of one vanilla pod

½ cup coconut oil, melted

Pinch Celtic Sea or Himalayan Rock Salt

1 cup desiccated coconut for rolling

Directions

  1. Put all ingredients in a blender and blend until just mixed

  2. Roll mixture into little balls with slightly wet hands

  3. Roll around in the coconut until coated and put in the fridge for 20 mins until they firm up. Store in fridge
