Grain-free chocolate granola

Throw this crunchy granola on top of some berries and yoghurt, and you have a quick and yummy breakfast, snack or dessert. If you’re on the go, grab a handful for a healthy, lo-carb and sustaining energy boost.

INGREDIENTS

3 cups mixed nuts like cashews, macadamias, almonds, walnuts, pecans or pistachios

1 cup coconut flakes

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1 cup raw cacao powder

1 tsp spices eg cinnamon

3 tbsp healthy fat like coconut oil, ghee or olive oil

2 tbsp maple syrup or 1 tbsp stevia

DIRECTIONS

  1. Preheat oven to 160 deg C fan forced

  2. Combine the nuts, seeds, cacao powder and spices in a bowl and mix well

  3. Melt your fat and mix with the maple syrup and/or stevia.

  4. Pour into the bowl with the nuts and mix thoroughly so all the nuts and seeds are coated

  5. Line a baking tray and spread the mixture evenly

  6. Bake for around 20 mins. Half way through, stir the nuts and flatten again to ensure the edges and top don’t burn

  7. Remove from the oven when the coconut is browned, cool and store in a sealed container. Enjoy
