Marinated onion rings

This is a simple and fabulous addition to salads, lunches and other meals. The onion rings ‘cook’ slightly without going soggy. Onions are full of prebiotics to feed your good gut bacteria and promote diversity, and polyphenols, which lower inflammation and anxiety. I’m addicted!

INGREDIENTS

1 red onion, thinly sliced

¾-1 cup extra virgin olive oil

1 tbsp dried oregano or thyme

1 tbsp red wine vinegar

DIRECTIONS

  1. Place the sliced onion in a bowl

  2. In a separate bowl, combine the olive oil, red wine vinegar and dried oregano or thyme together and mix well

  3. Pour the mixture over the onions, ensuring they’re submerged

  4. Let the mixture sit in room temperature to marinate for 3 to 12 hours. Refrigerate and keep for up to 5 days
