Keto matcha 'coffee'

As autumn kicks in and the days get cooler, there’s nothing more comforting than a warm drink. This recipe is a great coffee alternative. It’s delicious, quick, nutritious and will keep you going for hours. Matcha is an antioxidant powerhouse with cancer-fighting catechins. It also contains vitamin C as well as selenium, zinc and magnesium.

NOTES

You can use nut milks instead the coconut milk if you prefer. Cashew and macadamia milks are great substitutes

Dairy free

INGREDIENTS

½ cup coconut milk

½ cup hot water

½-1 tsp matcha powder

1 tbsp MCT oil

1 tbsp cacao butter

A couple drops of liquid stevia (optional)

DIRECTIONS

  1. Place the matcha powder in a mug

  2. Place the coconut milk and hot water in a small saucepan and heat until just about to bubble

  3. Pour the liquid into the mug containing the matcha and stir to combine

  4. Pour the mixture into a blender along with the rest of the ingredients and blend until smooth and creamy

  5. Consume immediately
