Apple Sauce

Apple sauce is a wonder food. Research shows the pectin it contains when sufficiently cooked improves gut barrier function, reduces gut inflammation, lowers general inflammation, and suppresses weight gain and fat accumulation. No wonder it’s a starter baby food. If you’re looking after your gut, it’s a simple and delicious thing you can do. Eat 2-4 tbsp twice daily.

Braeburn apples are the highest in pectin. Commercial apple sauce contains no pectin.

Unfortunately, freezing apple sauce may alter the pectin, which has a fragile physical structure. Also, do not microwave your apple sauce. Microwaving alters the molecular structure of food.

Ingredients

1 kg green or red apples, organic or chemical free

1/2 cup filtered water

Spices such as cinnamon, cloves or star anise, if desired

1 tsp Stevia, optional

Directions

  1. Wash and core the apples, ensuring they are seedless. Leave the skin on

  2. Place in a saucepan with the water. With the lid on heat to simmering point

  3. When the apple skin goes shiny, the pectin has been released take off the stove

  4. If you prefer, you can put the mix through a sieve. Otherwise eat with the skins, either hot or cold
