Quick and easy mayonnaise

This mayonnaise is made in a jar for a quick, easy, fresh and tasty version. You will need an immersion blender. Go wild and flavour as you like.

INGREDIENTS

1 cup olive, avocado or other oil, or a mix

1 large egg, organic

1 tsp lemon juice

1/2 tsp Dijon mustard, optional

1/4 teaspoon unrefined salt

Flavourings like garlic, spices like chilli or herbs such as tarragon or chives

  1. Add all ingredients into a wide-mouthed mason jar

  2. Insert the immersion blender so it touches the bottom, breaking the egg yolk with the blade

  3. Blend on high with the blender sitting near the bottom for around half a minute

  4. When the bottom is white, slowly raise the blender until the entire mixture has blended and turned white. The process will take 1 to 1 1/2 minutes

  5. Adjust the seasoning, add more lemon juice if desired, and flavour garlic, herbs etc

  6. Store with a lid in the fridge for 1-2 weeks
