Fluffy Cauliflower Fritters

These fluffy cauliflower fitters or cakes, are high in detoxing and disease-fighting antioxidants (sulforaphane), fat-fighting and gut-boosting fibre, as well as vitamins C, K, B6 and folate (vitamin B9). Eat as part of a delicious savoury breakfast, snack, or add to your lunch or dinner.

ingredients

4 cups cauliflower florets

Boiling water

2 large egga

1/3 cup cassava, tapioca or arrowroot flour OR for low oxalate use coconut, white rice, potato starch flours

2 cloves garlic, crushed

1/4 tsp each of white pepper, rosemary, oregano, natural salt

Pinch of cayenne pepper, optional

2 spring onions, chopped

1 tbsp chives, dried or fresh

Olive oil for frying

  1. Bring the hot water to the boil and boil or steam the cauliflower until soft

  2. Strain and put in a food processor, blending until smooth

  3. Add the egg, flour, herbs, salt and cayenne, and blend until well mixed

  4. Place the mixture in a bowl and add the spring onions and chives

  5. Heat some oil in a pan and place a couple of large spoonfuls of the pattie mixture in.

  6. Cook slowly on a medium heat until browned. Flip and cook the other side. This will take around 20-25 mins

  7. Eat with a yoghurt, lemon and garlic sauce, or plain, or add to any meal
