Gut healing salad

Salads can be a challenge – trying to make something other than the usual lettuce and tomato or coleslaw. So I created this gut healing salad using bone broth mayonnaise. It’s got great crunch to it contrasted with the smooth deliciousness of the mayonnaise dressing.

The bone broth is gut healing, helping to reduce leaky gut by tightening gut lining junctions

Fibre in vegetables is also gut healing as it feeds the bacteria that support our gut lining

ingredients

Salad

6-8 witlof leaves

Mixed salad with whatever you have in your fridge e.g. salad leaves, grated carrot, baby tomatoes, old roasted vegetables, cucumber

1-2 spring onions, chopped

4 tbsp chopped herbs e.g. coriander, parsley, mint

4-8 raw, grilled or jarred asparagus spears

Dressing

4 tbsp Gevity RX Great Guts Mayo or 4 tbsp healthy fat mayonnaise (e.g. made with olive oil) mixed with 1 tbsp Gevity RX Natural Bone Broth Body Glue

1 lime, juiced

2 tbsp white vinegar of your liking

1 tsp garlic powder, or 1 fresh garlic clove crushed

Natural salt and white pepper to taste

directions

  1. Arrange the witlof around the edges of a salad bowl or plate

  2. Mix the rest of the salad in a separate bowl, then spoon into the middle of the the witlof

  3. Mix the dressing well

  4. Pour the dressing over the salad

  5. Arrange the asparagus spears over the salad

  6. Season and enjoy
