Healthy caeser salad

Now that the weather is warming up, here’s a healthy version of a classic salad. It’s filled with good fats, and key vitamins. Make sure the bacon or prosciutto you use is free of preservatives and additives.

Cos or Romaine lettuce is an excellent source of the antioxidants Vitamins A and C, helps prevent bone loss with Vitamin K, boosts heart health with folate, and contains a high amount of Vitamin A, good for skin health and anti-ageing.

ingredients

  • 1/3 cup mayonnaise (using whole eggs, unprocessed oil, no sweetener), try this recipe

  • 2 tbsp fresh lemon juice

  • 1 small garlic clove, crushed

  • 1 tsp finely chopped anchovies, optional

  • Cracked pepper to taste

  • 1 small head Cos or Romaine lettuce

  • 4-5 slices of nitrite-free bacon or prosciutto

  • Gluten free bread and a little olive oil and butter for frying, optional

directions

  1. Fry bacon in a frying pan (or bake in the oven) until crisp.  Drain on paper towel.  When cool, break into small pieces

  2. Whisk together the mayonnaise, lemon juice, crushed garlic, anchovies and pepper

  3. Fry the paleo bread in a little olive oil and butter until crisp if using. Chop into croutons

  4. Tear or chop the washed and dried romaine lettuce into bite-size pieces

  5. Toss lettuce with dressing until evenly coated. Top with the bacon / prosciutto and bread, and serve
